Moist Choc Banana Muffins

This recipe makes 12 large muffins – including a bit left over to eat raw- yummo!

Ingredients

  • 1 3/4c Self Raising flour
  • 1/2 tsp vanilla essence
  • 100 g butter (melted)
  • 1c yogurt – any sort is fine (plain, vanilla, strawberry, natural etc)
  • 1/2c milk
  • 1 egg
  • 1c caster sugar
  • 100g choc chips (milk, white or dark)
  • 2 large very ripe bananas (choped roughly)- can be used frozen

Directions

  1. Pe-heat oven to 200′C/400′F
  2. Taste test choc bits (to make sure they havn’t gone off)
  3. Place sifted flour in a bowl.  Add sugar and choc bits
  4. Mix well
  5. In another bowl mix the egg, yoghurt, milk & vanilla
  6. Pour into the middle of the dry ingredients.  Add melted butter and banana bits
  7. Carefully mix all ingredients together
  8. Taste test
  9. Taste test again (just incase)!
  10. Place mixture into well greased muffin tins almost to the top
  11. Bake for approximately 15 mins or until muffins spring back when touched
  12. Remove from oven.  Leave in tray for 5 mins before removing.  Cool on a rack

Variations

Instead of the choc bits and banana, you could replace them with the following:

2 large bananas (chopped roughly) &
100g Blueberries

or

1/4c cocoa &
Berries – either placed in the centre of the muffins or mixed into the recipe

or

1 1/2 lg apples (diced into about 1cm cubes) &
1 tsp cinnamon

Alternatively, you could always create your own irrestistible recipe!

Have I died and gone to recipe heaven?
That is the question you will be asking yourself after trying these recipes for yourself.

Ok, well I know there are heaps of (great) recipe sites out there already, but I have created this one as I am often searching the net for yummy recipes.  By that I mean recipes that taste sooo good that you don’t want to share, but you do anyway.  If you want to post your greatest and yummiest recipes then the requirents are as follows: they have to be given thumbs up by a few people at least before they can make it to recipe heaven!

Oh, and another thing…  these recipes dont take a master cook to make.  There is no worrying about curdling, going a bit over or under on the ingredients or using self raising flour instead of plain flour & baking powder/soda.  So enjoy the best recipes ever and let us know if you make any variations to the original.
