This recipe makes 12 large muffins – including a bit left over to eat raw- yummo!
Ingredients
- 1 3/4c Self Raising flour
- 1/2 tsp vanilla essence
- 100 g butter (melted)
- 1c yogurt – any sort is fine (plain, vanilla, strawberry, natural etc)
- 1/2c milk
- 1 egg
- 1c caster sugar
- 100g choc chips (milk, white or dark)
- 2 large very ripe bananas (choped roughly)- can be used frozen
Directions
- Pe-heat oven to 200′C/400′F
- Taste test choc bits (to make sure they havn’t gone off)
- Place sifted flour in a bowl. Add sugar and choc bits
- Mix well
- In another bowl mix the egg, yoghurt, milk & vanilla
- Pour into the middle of the dry ingredients. Add melted butter and banana bits
- Carefully mix all ingredients together
- Taste test
- Taste test again (just incase)!
- Place mixture into well greased muffin tins almost to the top
- Bake for approximately 15 mins or until muffins spring back when touched
- Remove from oven. Leave in tray for 5 mins before removing. Cool on a rack
Variations
Instead of the choc bits and banana, you could replace them with the following:
2 large bananas (chopped roughly) &
100g Blueberries
or
1/4c cocoa &
Berries – either placed in the centre of the muffins or mixed into the recipe
or
1 1/2 lg apples (diced into about 1cm cubes) &
1 tsp cinnamon
